PINOT NOIR
APPELLATION D'ORIGINE CONTRÔLÉE POMMARD
VINTAGE OVERVIEW:
2023 Burgundy was blessed by rainfall at the right times and near perfect conditions during flowering and fruit set, resulting in moderate to large crops. Disease pressure was low and easily managed by the vignerons. Warm temperatures were welcomed by the lush canopies and generous crop load leading to a very even growing season. As harvest began in late August, the temperatures began to spike and we decided to harvest on the
early side of the ripening spectrum.
HARVEST:
The fruit was manually harvested on the 7th September on a near perfect day. 700kg was purchased to allow us two barriques post press. Upon return to the winery, the fruit was rigorously sorted by hand, and was then mostly de-stemmed prior to going to a single tank.
VINIFICATION:
- It took a few days for the indigenous yeast to kick the fermentation off, and following this gentle hand plunging commenced for the next 14 days prior to pressing.
- Elevage: The wine was aged in two French oak 228L barriques (two and four year old) for 10 months.
- Blending: The final wine was bottled without fining or filtration.
