HARVEST:
Friday 15th September saw Michael collect the 1/2T parcel of hand picked fruit, returning to the winery located on the outskirts of Beaune to sort and process. Gently foot trodden in tank before pressed off after 10 days.
VINIFICATION:
- Whole bunch fermentation: 100%
- Elevage: Stainless Steel for 9 months post-press.
- Bottled without fining or filtration.
